Carp is considered a "trash fish" that is only eaten by those of us who were lucky enough to have a mother-in-law that could can them, turning them into delicious morsels of tender goodness. I do miss my mother-in-law, for many reasons, not just that she was the second best cook in the world who taught the best cook in the world, my bride.
Really? I didn't know that! I mostly know them as the big red/white/black fish that swim in pretty garden ponds...but I didn't know they were so difficult to prepare! You're a lucky man Big Mike! Yum!
